Fruit ripening refers to the process by which a fruit undergoes physiological and biochemical changes that result in its transition from an immature, unripe state to a mature, ripe state. During ripening, fruits undergo various transformations that make them more palatable, fragrant, and attractive to seed dispersers, such as animals or humans.
The ripening process involves a complex interplay of biochemical reactions, including the breakdown of complex carbohydrates, changes in pigments, softening of the fruit tissue, and the production of aroma compounds. These changes are regulated by various factors, including the fruit's genetic makeup, hormone levels, environmental conditions, and external influences.
